Are you looking for that perfect brownie which is soft and gooey on the inside and crispy on the outside? Don’t worry I’ve got your back! After baking many brownies in my time I can safely say these are absolutely divine. They are completely devilish so maybe go for a jog after eating one…or three…but common they are totally worth it! Heat up the brownie and serve with a dollop of vanilla ice-cream and I guarantee for you fellow chocoholics it’s the best dessert!
- 150g butter
- 350g castor sugar
- 4 eggs
- 5ml vanilla essence
- 150g flour
- 100g cocoa powder
- pinch of salt
- 200g white chocolate buttons
- 200g cooking chocolate roughly chopped
- macadamia nuts, roughly chopped
Makes roughly 24
Preheat oven to 170 degrees. Grease and line a baking tin.
Sift the flour, cocoa and salt in a large mixing bowl, and mix in the chocolate and nuts.
Beat the sugar and eggs until pale and creamy, then add the vanilla and butter, and beat again.
Add the sugar mixture to the dry ingredients and mix well.
Pour the batter into the baking tin and bake for 30 minutes or until just set but still soft in the middle.
Cool in the tin and slice into squares then pop one in your mouth!
