You know when you just get those sudden sweet cravings, but it’s not a chocolate bar kind of cravings it’s an I NEED A DESSERT RIGHT NOW kind of craving… Well yes I get them quite regularly and last night I needed to make something. We had no eggs, no milk and no cream – baking is kind of hard without any of these ingredients. I managed to make the most delicious little fruit crumble with just five simple ingredients. I’d never heard of a nectarine crumble but hey if peaches work then why not! This recipe takes about 40 minutes including stewing and baking time; plus you’ll probably have the ingredients already in your cupboard and fridge. Any fruit would work well – peaches, pears, apples, etc… This recipe is great if you’ve got last minute guests coming over, just double the recipe and buy a tub of vanilla bean ice-cream!
- 4 medium size nectarines, thinly sliced (leave skin on)
- 1/4 cup sugar
- 1 tbl butter
- 2 tbl water
- 1/2 cup toasted muesli (mixed muesli with nuts is fine)
- sprinkle of coconut
Pre-heat oven to 150 degrees.
Place fruit, sugar, butter and water into a small saucepan on low heat then stir. Leave for approximately 20 minutes or until fruit are very soft and a syrup is formed.
Pour fruit into a shallow, small baking dish then top with muesli and pop into the oven for about 20 minutes or until the top has browned.
Once cooked sprinkle coconut over the top and serve hot with a scoop of vanilla bean ice-cream!
