Berrylicious cocktail sorbet

So who doesn’t love sorbet? Especially a berry and alcoholic one… I couldn’t resist putting this recipe up on my blog as it’s so damn berrylicious! You can use any fruit really, but vodka and berries just goes so well together. This is the perfect drink for parties, small get togethers with the girls, or even a refreshing drink on a hot summers day.

  • 1 cup white sugar
  • 1 cup water
  • juice of 1 lime
  • 400g frozen berries
  • 3/4 cup vodka
  • mint

Serves 5

Make the sugar syrup by combining the sugar and water in a small pot over low heat. Stir until sugar is dissolved and then add half the frozen berries. Let the syrup simmer for five minutes without stirring and then cool.

Once the syrup is cooled pour into a large bowl and add the vodka, lime juice and the berries then blitz with a hand-held blender until mixture is frothy and well combined.

Place the mixture in the fridge for an hour.

Pour mixture into an ice-cream maker and process according to instructions (alternatively put mixture in freezer and wait for it to set).

Serve sorbet straight away with a sprig of mint. Keep stored in the freezer – if there’s any left that is!

Happy drinking, love Jem x
